Tried the Big Bob Gibson. I didn't care for it, but a buddy just loves the stuff. To each there own I guess.

I've used Big Bob Gibson's sauce on chicken. I've also made my own copycat recipe. I like it alot. Didn't go over with the family so well. Never tried it on pork.

So, is this white sauce mopped on while the meat's smoking, or do you mix it with the shredded pork or chicken?

John, most of the time this sauce is used on grilled chicken. I've used it by dipping a piece of chicken into the sauce right at the end of cooking and then back on the grill for a just a few minutes to set the sauce and then a light brushing of sauce when you pull the chicken of the grill.

I will give it a shot and see what she thinks.

I put one together last week and didn't tell her, and she did compliment so the amount of vinegar must have been good.

I used cider vinegar, vegetable oil, water, and garlic.

2 Cups Mayo
2 Tbls. Course Black Pepper
1 1/2 tsps. Kosher Salt
6 Tbls.Lemon Juice
6 Tbls.Apple Cider Vinegar
4 Tbls. White Sugar
1 Tbls Horseradish
and a few shakes of Cayenne

The horseradish sounds good... Hmm, I think I'll make up a mayo-horseradish-mustard sauce next pork butt I smoke. Looks like a few tweaks of your recipe would do it. Thanks for the recipe SmokinLee.... looks great. I'll make up your recipe first and try it the way you make it before I change anything, though. Looks good.

The Wife and I love the 'Bama White Sauce on chicken. It's not as good on pork or beef. The sauce seems tailored to the poultry. I've tried Big Bob Gibson's and a copy cat sauce. Both were great on chicken. And any chicken will do. I brought some to a Super Bowl party and they and fried chicken and the chicken-like McNuggets, the sauce went great with both.
