Default Beef Chuck Short Ribs (lots of pics)

I scored some very nice Beef Chuck Short Ribs at Restaurant Depot on Sunday.



It was such a nice day that I had to cook some. I gave them a nice rubbing with Big Mista's Bitchin' Beef Rub and put them in the Memphis Pro at 250 degrees.




They cooked for almost 6 hours before they probed like buttah...



I foiled them and let them rest in a cooler for a while. When i cut into the ribs there very moist and tender. The bones pulled out easily and cleanly.



I would definitely do these again! Big Mista's rub is very good. It is saltier than my normal beef rub, Bovine Bold, so I would use less next time. It had a very nice tang to it that reminded me of citrus that made it unique.
