Default Spicy Rabbit Jambalaya "Oh yeah"

Oh yes, the base of the Jambalaya.


The trinity



Chorizo fried.


Poor Bugs.


Sliced.


Cooked in the Chorizo fat


Trinity sauted in the fat


Pressure cooked for 25 minutes.


Added rice, pressured cooked for another 20 minutes


Bowled and ate.

Looks Good, few questions.....
Chorizo? Most Jambalaya uses Andouille sausage, a cajun spiced sausage. or even Tasso ham in some situations.
What did you do with the rest of the rabbit? I would have put the front and hind quarters right in with it, and even the chopped the saddle into a few pieces.
Most Jambalya is a little more rice heavy, this looks more like a Chorizo and Rabbit soup with rice.
Not trying to be critical, but just calling it what it is.
