Ok, no one is going to watch me put out, I have performance anxiety...

Back to garnish. I will say this. It is a meat contest and not a Sauce contest or a garnish contest. However, after taking my class way back in 2005 or 06 (cant remember I am old) and helping with the last couple here in the last few years, a box without garnish looks like crap compared to one with garnish. Unless the garnish is built sloppy. A sloppy garnish box (lettuce coming out over the sides and such) is worse than no garnish.

So I have another question, why dont we have the same discussion on sauce as we do garnish ? It isnt a sauce contest...

Because the vast majority doesn't mind putting sauce/glaze on the meat. But I would bet you at least half of the teams dont like (along with the added expense) putting garnish in boxes.

I have fat fingers and big old paws!
It is difficult for me to put them lil sprigs of parsley into the boxes.
These hands were formerly used for saving lives and putting out fires.
