Default How to find a good BUTT.

This is the new rule 10 that I just copied from the KCBS website

"As reflected in Rule 10, the KCBS Board of Directors has adopted the National Pork Board’s definitions which define the standard for cuts of Boston Butt (item 406 bone in or without bone), Picnic (item 405 bone in or without bone) and/or Whole Shoulder (item 403). Pork Collar is not included in these approved “American” definitions of food service cuts of pork. Therefore pork collar is not an acceptable cut to be approved at meat inspection or turned in for the purposes of competition under the rules of KCBS. In the event a pork collar cut is turned in, it shall receive a score of 1 by all judges in all criteria as a foreign object being a non-approved cut of meat. Which of these numbers will have the largest amount of Money Muscle. I have cooked 3 cases of pork butts in the last while. I am P-----d that there were minimal money muscles. WTF has happen to them. 30 butts this is not a fluke??? I want what I used to get. Anyone want to help me understand this? If there is a specific number that is the premium...... That is what I want to buy.

Sorry for ranting, but I am frustrated with this constant gata have it cheaper chit.

I buy IBP hand trimmed pork butts from Sam's and haven't seen any reduction in sizes of the money muscle.

There are other very nice muscles in the pork butt that work quite well in a turn in box if the money muscles aren't up to par.

+1 on what Rich said. The new rule from KCBS is not about getting anything cheaper, it is in response to a cut of meat that Snake River Farms was selling and some teams were using it. The KCBS just outlawed that cut with this rule...
