My wife is changing her diet, and so I need to try to adapt BBQ to meet her needs. Has anyone had luck using salt and/or (brown) sugar alternatives in their rub? I am asking the same question in the sauce thread about BBQ sauce.

As far as salt goes, don't use it in the rub. If you can use it, salt your meat before applying the rub that way you can control how much or how little salt you have. Most salt substitutes I have tried taste like chit.
Splenda makes a granular brown sugar that I have seen used in some low sugar or sugar free sauce recipes. As far as salt in your sauce, don't add it. If you're using Ketchup as a base or tomato sauce, you won't miss it. Try google for sugar free BBQ sauce and/or no salt/low salt dry rubs/sauces. Good luck!

I have similar diet needs and have gone to sea salt and a greatly reduced quanity. After a while you will get so you do not like the taste of salt. At least we have.
We use aguave sweetner and sugar free pancake syrup as good alternatives. Good luck! Derek is salt free and he will probably chime in.

Jim,
When I used to make salt free rubs? I've used a salt substitute called No Salt. It does have an iodized flavor after taste, so use it sparingly. My first Pork and Rib rib I've used the salt on got me 11th place in Silver Lake Michigan BBQ comp last year with it. Since then the fellas here steered me away from the salt crap and I strictly use Kosher salt and sea salt in my rubs now. I hope my little rambling has helped you Jim. |

Gotta tell ya'll. The stuff is pretty darn good. He has it with, or without salt. Either way.... really good stuff!
