Default Rib times

Sooooo....New cooker problems (that are only problems in my head). Typically, the way I cook ribs they were done in 4 hours at around 275* to 300*. New cooker with the temp reading 275*, ribs are done in 2.5 hours. They are in smoke for 1.5hrs then wrapped for an hours. Toothpick tender (even though I temp my ribs) Kinda throws my time out the door.

They were real good too.

My roto cooks ribs in 3 hrs flat at 275 so with foiling your right on.
