Not really a big thing up north here. I COULD direct you to a nice Aussie site...they do tons of lamb. I'm gonna take a run at a leg here soon. Damned pricy tho.

Did one for my open house when I gradutated high school. Neighbor who raised them helped with 97% of it. They, loaded up rib cage area with carrots onions, potatoes, celery (same stuff for a soup) soaked the whole thing in Italian dressing over night. day of, they seasoned with lowerys seasoning salt. They had a cooker with a spit and thats how they cooked it. I want to say roughly 6 hours. Was very good I cut a whole leg off and kept it for myself.

I put a lamb on a spit every orthodox easter.

Not really a rub, but I rub a generous amount of sea salt onto the surface then as cooking baste with olive oil, lemon juice, rosemary, and a little granulated garlic... Then after basting I add a bit more salt.

Fill the carcass with cut up lemons, some rosemary sprigs, and bread to soak up juices. Tie shut.
