Did one for my open house when I gradutated high school. Neighbor who raised them helped with 97% of it. They, loaded up rib cage area with carrots onions, potatoes, celery (same stuff for a soup) soaked the whole thing in Italian dressing over night. day of, they seasoned with lowerys seasoning salt. They had a cooker with a spit and thats how they cooked it. I want to say roughly 6 hours. Was very good I cut a whole leg off and kept it for myself.
