I heard Arby's Brisket has no Bark. They must think its overrated too...

All I am saying is it isn't and either or proposition. I have had brisket with beautiful looking bark at bbq joints that tasted like crap and were tough as nails.
I have also had brisket that had a little bark but was very flavorful and tender.

Just because you don't have bark doesn't mean you have failed at brisket...
