Sooooo....New cooker problems (that are only problems in my head). Typically, the way I cook ribs they were done in 4 hours at around 275* to 300*. New cooker with the temp reading 275*, ribs are done in 2.5 hours. They are in smoke for 1.5hrs then wrapped for an hours. Toothpick tender (even though I temp my ribs) Kinda throws my time out the door.

They were real good too.

Every cooker is different. This is why bbq is so much fun.

My roto cooks ribs in 3 hrs flat at 275 so with foiling your right on.

cook em til they're done Mine take 5 hours....I'd let em cook for that long
