Very impressive Bubba.
Are they going to make you wear overalls with one strap buckled and the other hanging and a set of those "Bubba" fake teeth? They should get you some T shirts with the arrow on them that says "I'm with her" and in parenthesis (my sister). Oh I crack me up sometimes!!

You are both right, they have an Olyer for the main pit and they also have a Santa Maria Grill as well. It is going to be a very cool place when it opens... :D

Mock opening tonight. Saw lots of familiar faces. :D

Went pretty good considering i've only been cooking on this thing for a short time. Lots of compliments and the food will only get better!

Well Dick and I went down to Lockharts last night. Here is my honest take (keep in mind my partner is the pitmaster there) on the food and the place:

The food was very good, the brisket and burnt ends were awesome. The ribs were ok. The side dishes need a little work and I am sure they will get it right.

The place itself is very nice, the pits are right in the center when you walk in and the servers aren't too bad to look at either!!

For a first night of actually serving customers I would give them a 7 out of 10 with the knowledge that it is only going to get better. I would definitely go back again.

I heard the presentation wasn't so great. Rumor has it that all meat entrees are served in Styrofoam "to go" containers in 6 piece portions neatly laid on a bed of greenery....

Well it turns out that the wife is off to Seattle in about 10 days and will be gone for a week so I will have the best reason I can think of to go to Lockharts....after a couple of days, I hate my own cooking so I usually go out. At least this time I can go check out some good q. They should have most of the kinks worked out by then...
