Who is doing what for the 4th on Saturday?

I'm going to a family cook out, and I will be grilling 2 Blue Crabs,

I will be spritzing the blue crap with this mixture.

2 table spoons evoo, 2 table spoons of Gee ( clarified budda ), And powdered garlic, for the seasoning.

The crabs & the chicken, and the stakes are going to be cooked low and slow, The temp is going to be set too 250, and maintained at 250. for about 3 hours while everything cooks.


I know the blue crab will be be cooked in 30-40 minutes even at that temp!

Grill ‘em Florida Soft-Shell Blue Crabs

12 medium Florida soft-shell blue crabs
¼ teaspoon nutmeg
¾ cup chopped fresh parsley
¼ teaspoon soy sauce
¼ cup vegetable oil
1/8 teaspoon hot pepper sauce
1 teaspoon lemon juice
lemon wedges

Rinse crabs under cold running water. Place crabs in well-oiled, hinged wire grills.
Combine remaining ingredients except lemon wedges and warm over medium heat in saucepan.
Baste crabs with sauce. Place crabs on rack about 4 inches from moderately hot coals and cook for 8 minutes.
Baste with sauce. Turn and cook 7 to 10 minutes longer or until lightly browned . Serve with lemon wedges.
Yield: 6 servings.

I just put the recipe on there because I think 30-40 minutes would be too long.

They left the crabs on too long and the crabs became un edible.

Maybe about 15-20 minutes on a wood plank?

grilled fillet of beef with grilled fingerling potatoes, fresh green beans with sliced fresh garlic saute'd with EVOO, s&p - and marinated grilled shrimps for apps. for 10 people. lots of beer/wine/captain/vodka etc to keep us hydrated in the heat.

Got a nice pork loin, gonna stuff it with some provolone and fresh spinach then throw it on the WSM. Got a batch of wings to do too.

And yes, I love to spritz, but maybe I should use my new mop now, far go the spritzer.

Derek, I would forgo both... I usually only spritz near the end and have never mopped, but everyone gets a different result... If it works for you go for it!!

You should try not spritzing. You should mow the lawn while cooking to keep yourself busy.

Many thx Rich. Appriciate it. Not gonna do much with the shrimp. She likes to taste the shrimp. Maybe just a tad of EVOO, and a pinch of garlic granules. Kick back and enjoy the evening.......

Many, Many thx Derek!!!! She likes the taste of the shrimp. No frying, spritzing, over seasoning...... Just a lite taste of EVOO, garlic, small pinch of kosher, and a very small grind of pepper. Grilled. Gotta make her the happiest camper in town!!!!!

Ah..... no. The taste of the meat/fish/ veggie is more important than an injection, mop, or spritz. Specially when it comes to the Dawgette.

Fortunately, I just BBQ'd about 8 meals of various meats in the smoker on Thursday, and a beer can chicken today, so we're all set with plenty of BBQ. Going to take leftover marinade from thursday and drippings(what was in the water pan), which has a really nice smoky flavor and make some smoky baked beans tomorrow. We're good for the weekend.

Unfortunately, it's going to be really hot here tthe next few days, and my wife and I both have sun poisoning because of medications that increase photo-sensitivity. Heat sets off a worse reaction too..... so we'll be spending a few days indoors watching movies and reading(BBQ books for me) until it cools off a bit or gets cloudy..... Monday maybe.

The rest of you, enjoy the festivities and BBQing. I've got 3 Boston Butts to smoke for pulled pork one day next week, for a family get-together on the 10th, and I'll smoke some more ribs and other stuff for me and the wife while I'm at it. Just waiting for a cool(er) day to do it.

Baked beans are simmering now. We're getting ready to eat the last of the ribs I fixed Thursday and will feast on beer can chicken and a serving of beans tonite.

The baked bean recipe:

One medium onion chopped
a medium hot chili finely chopped(seeds removed)I used a poblano
1 small tomato diced
1/2 red bell pepper chopped
Needles from 1 long stem of rosemary finely chopped

Sautee all the above in oil until the onion just begins to caramelize

one can of beans(whatever you have):
Northern, Pinto, Blackeyed Peas, or even Garbanzo beans will do

1/2 cup of pulled pork

prepared mustard
ketchup(about twice as much as the mustard)
some drippings etc. from last smoker session
blackstrap molaasses

Add the four items above to taste and toss in some black pepper.

Combine everything in a small pot and simmer until it's cooked down to desired consistency.

Makes four servings. Just right for a couple of meals for my wife and I.
