well next weekend heading up to cabin for the holiday, bring up the smoker and doing 3 slabs of ribs and would like to make a couple bacon raped fatty. never made a fatty, so not sure on what to fill them with would like to make 1 spicy 1 and 1 mild. if any you guys have ideas i would appreciate it .

but I'm pretty sure how to assemble a fatty . the question i have is i need a good filling recipe . would like a spicy one and a mild one, the people i am cooking for are not huge fans of smoked food so i would like impress them and change there minds as a appetizer well the spares are cooking

Cheese, refried beans, fried onions and mushrooms.
What ever your favorite food is ok to put into a fatty. Some folks make blueberry pancakes and put in them.
Let your imagination run wild and do be afraid to get creative.
Some folks put in hot peppers like halapenos ..sp?
I like to use JD or other name brand sausage, choose your flavor and heat.
Just stuff them, wrap them tight in a quality plastic wrap and refridgerate over nite, unwrap and smoke them.
Be sure to rest them 20 minutes before slicing, lets the cheese set up.
Pillsbury biscuts take about 30 minutes on average smoker at 250 degrees, split them and add a slice of fatty and you have good eats.

One of my favorites is onion, mushrooms, and an andouille. Another good one was scrambled eggs, cheese, and onions. Another was onions, mushrooms, and garlic. And another good one was the banana nut muffin fatty. yummy

Last one I did was a huge success with everyone. I saute'd some onion, mushrooms, a pinch of garlic, in EVOO. Then added a few splashes of St Michelle Reisling and reduced that until most liquid was gone. Stuffed the fatty with the mixture and shredded cheese. Then wrapped the whole thing in bacon. Turned out pretty good!
Another thing you can do is to go "Frig Diving". Get in the frig a get anything thats leftover and make a stuffed fatty out that!

Easy way out is to buy some sausage link, andouille if thats what you like and some of that string cheese. flatten out the sausage meat, lay the andouille long ways with the string cheese along side of it, roll it all up and bingo!.
Also try the different flavored sausage like maple or sage, they add their own twist.
