View Full Version : How to do small parties.

Here is my question. I have a small party to do. It's about 40 minutes from my house. Just doing chicken and ribs. I would perfer to do most of the cooking at home then maybe just finish it up there. Is this possible? Can I go down the road throwing thin blue, I'm not thinking so. Do I cook it complete then get there a couple hours early and fire it up and just put the finishing touches on it? I'm sure they want to see it come off the smoker. Any advice would be great. Thanks

this is just how i would go about it and may not be the same as others, but. you can do the ribs ahead of time and then grill them up on site. chicken, i would just do there. if you have a catering grill or one large enough you probably would not even need the cooker, but its nice for customer visuals. i do them all different ways depending on what the customer wants or expects to see but i cover that in the quote. best of luck, sounds fun.

Thank you, that sounds like a good plan. They want to see the smoker run so I'll just have to get there early enough to fire it and do the chicken on it and then just the finishing touches on the ribs. It will look good for them and everybody should be happy. This is my first one so I'm sure I will learn what to do and not to do but I would still like anybody elses input on this.Thanks

I think you better build a front shelf on your smoker Shane. It will make everything a whole lot easier on you. Maybe you already did.:)

Yes, do not go down the road with a lit fire for 40 minutes. If it was 3-5, I would maybe try it.:D

Thanks, with everything else I've had going I honestly forgot about that. I can come up with the length but how wide is common?

Well, you hafta lean over the tire anyways, might as well be that wide anyways. What ever is comfortable to lean and reach for heavy stuff.

Wide enough that whatever pan you put on it won't tip over and fall to the ground, so I've heard.:rolleyes:

Mounted the fenders on last night and painted them up. Also made the front shelf. Ended up being about 55"x14". Have to weld it together tonight and put on the expanded stainless flat and she will be beautiful. Thanks for the suggestions

i go down the road all the time fired up but thats with my smoker i wouldnt do it with the lang i use to have also i dont leave raw meat while driving it makes too much dust.
