View Full Version : Does Fresh/Homemade make a difference...?

Greetings to all,

So I'm almost finished reading Paul Kirk's book and he preaches fresh or homemade alot and it got me to thinking about asking for others opinions. Do you make _______ fresh? If you use Apple Juice in your cooking, does it make a difference if you use juice fresh from the farm vs. store bought?

No Report! - Oops sorry wrong forum. :D

I am not very experienced but I have tried some fresh herbs in my rubs and haven't noticed a difference. I have noticed a difference in taste when it comes to manufacturers of spice. I recently bought some sweet hungarian paprika from Penzies and it tasted different then the stuff my wife picked up at Meijer.

I use the cheapest apple juice I can find.

In regards to juice, there is a difference. Apple cider obviously has a stronger apple flavor than no brand walmart apple juice. Also the sugar content can make a difference in the bark that you want if you spritz with apple juice, the better sugar content the better the bark, the sugar carmelizes and forms better bark.
Also, thawed juice concentrates are more potent than off brand juices.

I know this is going to sound bad, but I insist on U.S. Made Apple Juice. I pay a little more for it, but I am know I am not getting crap from some other country... I also ensure that it is 100% juice and not juice from concentrate. These are just my little per peeves... YMMV...

I guess my question is more around the fact that we live in the middle of apple and peach country. I've got zero issue with stock piling stuff that we just squeezed if there is a different. I guess it's just one of those things I will have to try for myself. Now, I just need to find a smoker to test on...

I didn't know my apple juice came from out of the US :eek:

I am sure someone on the site could hook you up or steer you in the direction of a good smoker, PM Mike ask him what he has, Bubba makes drums etc...
Who else here has something on their deck they may want to get rid oF??

Yep, the only one that I know of that is made with US Apples and made in the US is Indian Summer, I get it at Krogers... Now if you went to the local orchard on got some juice I am sure it would be even better... :D

And that is exactly what I'm saying. Living in the great state that we do, we have access to all sorts of fresh produce. I always take the kids apple picking in October, but last year we did peaches, raspberries and strawberries. It was a lot of fun. I'm hoping that once we get in to March, I'll be able to take some tree trimmings off their hands. The only thing that bites is apple juice fresh like that isn't available until late august or September.

I got a couple burn barrels from the Indian summer packing plant in Belding MI and upon closer inspection the barrels had a sticker on it that read apple juice: a product of south africa. imagine grown, picked, juiced and shipped 1/2 way around the world cheaper than home grown.:eek:

That is a very special competition rated piece of equipment. It must be handled with extreme care so it produces the toppest of quality product.

I have never noticed the orchards selling apple juice but only apple cider. I will have to ask next time.

Indian Summer is the brand I usually buy at Family Fare.

You wont find any "juice" at the orchard in the fall, but the cider is awesome fresh!;)

One of the orchards south of town adds fresh Pear juice to thier cider. It is awsome, but only available fresh. I use cider and not juice. Hard cider is good for BBQ as well. Dole Pineapple Juice is good as well.
