View Full Version : Double Smoked Ham

Mike got me all excited about smoking some ham so I ran out this morning and picked me up a smoked half shank. I used Dr. Chicken's Double Smoked Ham glaze.

Glazing Sauce:

½ cup brown sugar
¼ cup maple syrup (use dark grade B real maple syrup if available)(dark grade B has more flavor than grade A)
¼ cup honey
2 Tbsp cider vinegar
1 – 2 Tbsp Worcestershire sauce
2 Tbsp instant coffee granules (use a good brand because it makes a difference)
1 Tbsp dry ground mustard
2 Tbsp orange juice concentrate (a good brand provides better flavor)

Blend all ingredients in a sauce pan with a wire whip and heat slightly until everything combines into a viscous or thick looking sauce.

I don't think I really have to worry about that.

Wait let me put on my Myron game face - You are darn tootin they are going to know me while I am kicking their arse all over this state.

I am hijacking my own thread but oh well. I had my wife watch the bbqpitmasters show with me and she asked me when I planned to start competing. I almost blew lemonade out my nose and told her I didn't want to be DAL like Paul. :D:D
