Kyote,
Hey, welcome aboard. Not to big of a group here but a fine bunch of friendly (except Bubba) people. Quite a life story you have there, that would be cool if you really wanted to fly in for the judging class.
Again, welcome.

Welcome Bill!

I would like to hear some coyote calling.

well, If I get there for the training to be a certified comp judge. I will give ya a treat.

the best sounds for around these parts is to sound like an animal that might, lets say is being eaten alive by another predator. or Coyote vocals. which is kinda hard to learn, their warning and greeting are a little to close of the same thing. but the greeting and locators howls are pretty easy. I make the dogs in the hood go nuts when I practice.lol. my cats come right to me looking for the critter that might be their food.

Hey Bill,
Welcome to the forum!! I have visited White Sands in New Mexico-very cool place. I used to travel to El Paso every couple of weeks when I lived in Dallas. I definitely miss the Green Chiles and Huevos Rancheros. Seems like all the steaks and burgers in the area were offered with the Green Chiles. Do you have a chile roaster??

There are a lot of helpful people on these forums-you will enjoy it...

Yes, all that have been here in the area a while, find the green chili to be addicting. and of course the state question is RED OR GREEN meaning what color chili do you want and both have it's very own distinctive taste.
the season is over for the chili. can only gte red dry right now and the farmers are making chili powder right now. which is great in rubs. But, I do not beleive you get it there. seems to all be consumed right here by restruants and folks.

yes, I do have a chili roaster. and normally roast 180 pounds of green every year and freeze it. chili con queso is wonderfull.
I assume you are talking about the barrel type roasters that you see in front of albertsons and other grocery stores. they do a good job. But make the flesh of the chili soggy. and some times over cooks it. the best is roasted over mesquite wood and peeled. very time consumimg. I normally do 10-30 pounds like that and use those for relanos. and an old timer showed me how to get the best flavor out of the chilis and said use a weed burner with high BTU out put. I wash the drive way off and wash the chilis and line em up next to each other fire up the weed burner and walk slowly by them letting the flames scorch the skin which turns black and starts peeling away. then flip em over and do the same to the other side. then I set them in a ss pan with a wet towel over them. head for the sink and peel them. I like leaving the seeds in for some dishes. but when I take em out of the freezer and don't need the seeds they easliy remove while semi frozen. if you get back this way look me up. I will hook you up with chili.
