Found this handwritten recipe in one of my grandmothers old cookbooks:
3lbs potatos
1/4 cup finely diced bacon
1/4 cup chopped onion
1 tablespoon flour
2 tsp salt
1 1/4 tablespoon sugar
1/4 tsp pepper
2/3 cup cider vinegar
1/3 cup water
1/2 tsp celery seed
3 tablespoons chopped parsley
Cook potatos in jacket until tender. Cool, peel, thinly slice.
Fry the bacon until crisp, add the onion and cook 1 minute. Blend in the flour, salt, sugar, and pepper. Add cider vinegar and water, cook 10 minutes stirring well.
Pour over sliced potatos, add celery seed and parsley, toss gently, serve warm.
