Did a reverse sear at 500º with inexpensive chuck steaks on the Yoder's GrillGrates to have with the lobster. Here is a pic of the steaks getting a sear on the grates after having smoked them at 180º for an hour.

Here is the lobster getting approximately 10 to 12 minutes on the GrillGrates (or when the Thermapen reads 160º).
