Did a 2.45 lber today.

Mixed a little kosher salt, coarse black pepper, and garlic granules. For that cut of meat, that's all that's needed. Want to taste meat! On the Kettle with a chunk of hickory.

Finished product. Sides were okra (softened onions, garlic, diced tomatoes, and okra), and Zatarain's "Broccoli & Cheese Rice" (but there was no rice in the pouch, just cheese mix.... added a cup of brown rice to the pot. called and gonna get a coupon for a free package of the stuff :D)

Was a single bone (thought there were 2), but that bone was good! Made some pseudo aus jus. Little over the rice and beef.

I had a very bad experience with some raw okra once. :(

To be fair if it was in a dish of gumbo I would try it again but never raw unless you want to clear your body of impurities. :(

Good looking grub there Geoff but I agree with Rich, eeww on the okra.
