Well got to admit you have a whole lot of flavors going on there, mexican, italian, alfredo sauce but the end result is what counts, that last picture is priceless!
Definately gives one different ideas to try. A mexican syle lasagna is not a bad idea.

Here is the ingredients Y'all need.

1. 2 Can's of Hormel's Chili ( Half quart of Home made "real chili" I like heat in mine.
2. 1 Bag of Triple threat Kraft Cheddar Cheese.
3. 1 Bag of Mozzarella Cheese.
4. 1 big jar of Three cheese Spaghetti sauce ( You can Use home made sauce or tomato sauce if you like )
5. 1 24 oz Jar of Alfredo Sauce.
6. 2 Bunch of Green ramps ( Use as a garnish )
7. 1 Cup of Sour cream .
8. 4 servings of Cottage cheese in a serving bowl
9. 1-2 bags of ""Chili Cheese Frito's""
10. 3-4 Tablespoons of Italian seasoning.

Step 1.
Cook the Manicotti noodles until they are el Dente.
Drain and wash them with cold water to keep them from cooking.
Place the noodles in the fridge until, you are to use them.

Step 1 A.
Take out the pots ans pans from the oven and set the oven to 375 for an hour.

Step 2.
While you are waiting for the Manicotti noodles to Firm up in the fridge.
Start Chopping the green onions into little bits to use as a garnish.

Set aside.

Now get out a one gallon zip lock bag and and throw 3 cups of fritos into the bag.

Here is the fun part, "If you have kids let them do this part with your watchful eye"

And ziplock the bag just enough to use your fist to pound them in to smaller bits.

Once done go ahead and leave the crushed up frito chips in the bag.

Step 3.
Take the Spaghetti Sauce or flavored tomato sauce, layer the bottom of the baking pan with it. Add 1 Tablespoons of of Italian seasoning all over the spaghetti sauce layer.

Step 4.
And now Add a layer of Triple threat cheddar cheese, like you did with the Spaghetti sauce. And now add the second tablespoon of Italian seasoning.

Now here is the fun part, It will get a little tricky.

Step 5.
Take the other Can of Hormel chili. And get a small spoon "a small eating spoon is ok to use"

And fill each Manicotti shell with Chili. And Stagger the shells on the bed of Chili.

Step 6.
Now take 1 can of Hormel's Chili and evenly layer it out over the stuffed shells.
Add the rest of the Italian seasoning over the chili.
Add the the rest of the spaghetti sauce over the chili and spread it out evenly.

Step 7.
Take your Alfredo sauce and do the same thing that you did with the spaghetti sauce.
And now layer the Mozzy cheese all over the Alfredo sauce.

Take the crushed Frito chips and layer that on the Mozzy cheese.

After you get it way you like too? Put it in the oven middle rack for 1 hour.

When its done it will have burnt end cheese marks all way around the baking pan.

Is there really anything inside the manicotti? they look empty.

I have to be completely honest. The combination of chili, spaghetti sauce, alfredo sauce and fritos does not sound all all appetizing.

I've made Mexican Lasagna before, but I stuck to Mexican flavors. It was great, a bit like an enchilada casserole.

Derek, c'mon ya'll.

You DID make Lasagna. You actually have to STUFF the shells to call it "stuffed" manicotti.

Glad Ya'll liked it.

Just to add something here. When I made Mexican Lasagna I used Tortilla shells in place of the noodles and used a taco meat as the filler. It was pretty tasty...
