Howdy all,
It's been a while since I've been trolling around these parts. We had a baby girl a few months back and since this is our second child, we had to change from zone to man-to-man defense. So I've been busy.
Anyways, anyone know a good butcher that I can get some pork belly from. I have not been able to find any and I want to cure and smoke my own bacon.
Any referrals would be appreciated..somewheres near Warren or surrounding areas.

Prolly yer best bet. I know the owner of Hollywood Markets...and if you have one near and talk to the butcher, they DO get them and he prolly could get 'em in for you.

I did one last summer for a local business and they got it from a meat place at the Eastern Market, just don't know which one.

Thanks for the suggestions. I figured that the eastern market would be the place to go.
I also pass by a hollywood to and from work so I'll explore both.

quick update.
went down to RJ's and they did not have any bellies. I went to all the counters in the market and wrigley's recommeded going to Kap's right across the expressway.
Kap's had bellies for 1.88 a #. Picking up some tenderquick today.

try some maple sugar or maple syrup with the tender quick uummm bacon
make all my own now you will never buy store bacon again

I may have a couple pork bellies probably next Monday.

Or an onion powder/garlic powder/little brown sugar. SOME of us don't want sweet bacon, yanno... ;{)
Whatever you do..NO SALT TQ has plenty.

I was that post in the s-m, Richtee...good info. I did a simple mix of equal parts TQ and dark brown sugar. Then added a tbs of fresh cracked pepper. Got it going on last Thursday so I am being patient and waiting a full 2 weeks before adding the smoke.
