This is a quick simple side dish that my aunt used to bring to all the family functions. Very tasty

1 15-ounce can drained whole corn
1 15-ounce can creamed corn
2 eggs
1 cup sour cream
½ stick butter or margarine(melted)
1 small box Jiffy brand cornbread mix
cheese (optional)


Mix everything except the Jiffy cornbread mix and beat it all up smooth then add the Jiffy cornbread mix. Mix well. Add cheese
(optional – whatever amount you want). Bake at 350 degrees for
about 45 minutes or until knife stuck into center comes out clean.

We make that recipe quite often.

Made the stuff last night. However, I did add some sliced, pickled jalapenos (kind from a jar) to half of it. Was it good! And so easy to make.

Tried this dish tonight and the family loved it. I bet it would go really well with barbecue; just a little sweetness to balance out some heat. We had it with Chicken and it was a little sweeter than I expected.

Do you guys use a baking dish for this recipe or can you put it in a cast iron skillet?

I did it in a casserole dish (2Q, I believe and it was filled to the top as it rose during baking). I mixed and baked in the same dish. The residue on the dish was pretty heavy, but a soak cleaned it. I wonder if Cast Iron would be better (less sticking), or worse (harder to clean).

Made it before, and what a gorgeous day to make it again. Cold, snowy,perfect day for something like this. Course gonna add jalapenos again!

Great recipe! I was in a pinch over the holidays and didn't have a can of creaned corn. So i made my own and it was yummy. My wife would eat if for every meal if i let her! Thanks gor sharing.

This recipe is one of my favorites. Was gonna make some as a side to the beef roast, but kinda hard to make it when:

1) no cornbread mix (or cornmeal)
2) no corn of any kind at all
3) no sour cream
4) no cheese

And yes, I thought we had the ingredients.

I did have jalapenos though.
