I am actually making my very first cold smoker with the help of you guys. Well more of Jerry's help.

I cant help you guys on a smoke house, but we (Great Lakes BBQ Supply Co) do carry hickory smoking bits, much smaller than chips and are perfect for cold smoking.

Thanks Lee! Had not seen this one. That is true I can! I made a much larger one for charcoal years ago. Worked pretty good.
Been looking at the gravity feed ones with pump. Those seem almost to simple.
I do have a couple ideas, but really don't know much about this. I figured Richtee had all this wired and could tell us the best way.

I have been using something I built along time ago. I cold smoke lots of cheeses and sausage. All I use is a 15 gallon barrel which I burned out, hot plate in the bottom with a saw dust pan in that. I have a dryer hose attached to the top of the barrel. The hose is about 5 feet long. In the middle of the hose I have a computer fan to pull the smoke out of the barrel and into the smoker. Pretty easy set up and I can smoke at whatever the temperature is outside, compensating if you want more heat by running the smoker. This is a GOSM that I use for doing this with controls from "sausage maker.com"

I built a paint can cold smoke generator from the directions on the Naked Whiz's website. Took about 15 minutes to cut the lid and mount the elbow, and a few minutes ot drill the three holes for the little legs and air holes. Works like a tiny UDS and the length of dryer vent pipe cools the smoke down. I burn wood chips/pellets/crushed Smoke Stix in it. I used a non-galvanized metal electrical box for the fire box, a few screws hold it off the bottom of the paint can to allow air to circulate. The vent pipe can be hooked up to any cooker/box/jug/etc for cold smoking. I cut a vent in a plastic jug and have a few racks in it to smoke cheese. I simply cut a flap in the plastic that I adjust for smoke amount and bend open to add cheese. Very simple, cheap and effective! I used the snips to cut the lid, not a hole saw, and I did not screw the hose to the lid, just the friction holds it pretty tight. This produces quite a bit of smoke with a few pieces of lump in the firebox topped with the chips/pellets/etc. The smoker could be a box built of anything, wood to an old ice box. I guess even an old cooler or file cabinet would work.

"Paint cans are usually lined with some sort of coating on the inside. We have heard that if you are concerned about this coating burning and contaminating your smoke, you can take a propane torch and burn it off. Needless to say, do this is a well-ventilated area and avoid breathing any fumes that result."
May I just do 3-4 high heat burns with char coal to get the liner out?

I got my paint can from a place that supplies them for law enforcement as "evidence" containers. No linings, no chemicals, nothing to contaminate whatever goes inside. They do rust fairly easy, though, so I don't expect it to last for years. Check the local home store like Home Depot or Lowe's, they also carry several types that are lined and unlined. Using the smokey joe as the burner would eliminate that, just need to fit the dryer hose to the lid somehow. That would allow adjusting air intake to get a good, efficient burn w/o creosote or yellow smoke.

How about a tin can opened up on both ends. Cut three slots one inch long on one end and bend those tabs over. Place over vent, Drill hole in tabs, bolt together with lid, attach dryer hose.:)

But Whiz say's in one of his tutorials he uses duct tape, and I have a doner lid for the big smoker.
