View Full Version : Basil Tomato chicken filled Ravioli with tutorial.

Here's my Basil & chicken ravioli tutorial.

Dough recipe.
1 3 cups of flour.
2 4 tablespoons of Semolina flour.
3 4 egg's
4.A half of a teaspoon of sugar.
5.6 Basil leafs minced.
6.Half cup of Cold water.
7.2 pea size squeezes of Basil paste.

First mix the olive oil and basil paste together, set side.

Throw the basil leafs you chopped up into the food proc first.

Then Throw 3 cups of All purpose flour in a bowl of the food processor with big blade.

Then air rate it for 30 to 45 seconds to properly mix in both flour's and the basil leaf's together.

Now throw one at a time add the the egg's until mixed in the dough.
By now you should have a corn meal like consistency.

Now drizzle the basil paste olive oil mixture into the mix and process for 30 seconds or until blended.

Once that's set add the half of a cup of water to the dough.
Now it should start forming a ball and when it does take it out of the food proc, And let wrap slightly kneed it in a ball.

Wrap in plastic wrap and let rest for an hour.

one hour is up.

Now take the dough cut it with a bakers plane into 6 sections.

Roll out out on a lightly flour surfaced and use a cookie cutter and make a top and bottom of the ravioli

Added the REAL rind cheese Pecko romano reggi onio to the chicken for the salt instead of the salt.

Now cook these in the tomato / or a white cheese sauce for 8 minutes. and serve.

Everything was good, Although I need to learn ravioli dough more.

Don't use this recipe for the Ravioli I have one you can use.

Both air and rate are spelled correctly. There isn't a spell checker in the world that would put them together and figure out that it should be aerate :)

While getting kneed in the ball(s) would hurt, kneed is spelled correctly. The spell checker would not know that it should be knead. :)

I think that is supposed to be Parmigiano-Reggiano, but I have no clue. The spell checker didn't stand a chance! :)

Pecorino parmesan/romano was the destination. Amusing detour tho! You can't buy this stuff!

Hey Derek... Grandma'd lay the dough out in sheets, plop filling down spaced accordingly, top with another sheet of dough and just cut between the lumps... crimping after. Alot easier and more efficient. FYI...
