Here's my Beef Wellington Kitchen edition.

( I am out of char coal until Sunday )

Started out with a flank steak and I've put tenderizer on it.
and a little salt on both sides. And home made Basil Pesto.

Then I've added the mozzarella cheese.

Then I rolled it and glued it with tooth picks for the searing process.

The searing.

rolled the meat and the dough part way ( up to the tooth picks )
Took the picks out and then rolled it up completely. Added egg wash to the end product.

Also finally purchased a rib trimming / brisket trimming / butt and chciken trimming knife :)

He sharpened all 3 of them for free this time. ( the one that I've purchased will be sharpened for free since I got it from him. )

I like my beef medium rareington. Really Derek it looks really good so far.

It turned out well despite a few glitches ( mainly too many cooks in the Kitchen )

The Wellington Complete ( It was ok ) but had some temp issues with the parent( and it got over cooked )

I have to admit though, This one was far better then the one did when I first started making them.

Yep, a bit overcooked. But still...you don't see a Wellington every day eh! Bravo!

Nice Sanktauo err whatever... Damascus/folded steel. Nice knives in general actually. I'm impressed!

Keep on cooking, man. Yer gonna make some lady a nice wife ;{)

i did a couple of them a while back for a gathering. i use a tenderloin in mine...... it over cooked a bit too, mainly because of too many vodka/tonic's during..... oops...

mine was not a "real" wellington for the most part.... i cheated just a bit and used a mushroom pate - instead of the goose, or duck liver, or what ever guts they sometimes use.
