I am looking for some help or maybe some tips for cooking with a Ole Hickory CTO. I am purchasing one and will have all winter to practice on but any other information would be great. It is a 4 rack fixed model if that makes any difference.

You gotta be sure and get the hickory flavored gas:p

Honestly you simply turn the temp dial to the desired smoking temp, make sure there is power and fuel and you do nothing, it's a dream. If you find that you have any trouble at all just p-m me and we will get it right. You made a very good choice by going with ole hickory the have been great to work with.

Is your pit new or used, do you have the competition switch and coal basket?

Thanks, it is a used pit that was in a local "BBQ" joint and only had gas and cherry wood ran through it. It doesnt have the comp switch but i talked with Kevin at Ole Hickory and he is going to ship one to me and how to install it. It has a smaller "flavor wood" basket but i am going to make a bigger one for competition use unless you have any other ideas. Troy im not sure if you would remember me, but I talked to you at the Liberty,In competition where you took GC, I took 1st ribs and 2nd pork and then bombed chicken and brisket.

Thank heavens for your chicken and brisket:D I believe I do remember... you were you that slight of build guy(compared to me) who kept getting big calls, wasn't that your first cook-off? I thought you or old Dave had that one in the bag.
Go with the comp basket from Ole hick, a new set of door and firebox gaskets are an inexpensive way to really boost performance. Good luck with the new (to you) pit I think you will be thrilled.

6'5 and 400 lbs im just a little feller lol. yea it was our 2nd comp ever... I was shocked as i quit paying attention to the calls after about 10th lol never expected it. Thanks for the info, if i have any questions i will shoot you a pm.
