View Full Version : Faux Belly Bacon

This really is Buckboard Bacon but what I want is belly like slices from this Butt. The Fat Cap Bacon from this butt looks pretty good and you can see my represenative slice. Tried to cut 1.5 inch slabs from around the butt and trim around the bone. I weighed each slab separate and applied the cure before stuffin them into the bag. Probably smoke near the end of next week. The big hunk in the back left is the bone which will be cured and smoked for bean soup and I got another 3 pounds for sausage making.

Very cool, I've actually made bacon from belly fat, but this is a cool way of doing this.
I used celery salt for the brine.

Smoked this today for 7 1/2 hours using apple chunks at 135 till I hit 128, even though I got to about 135..

Couldn't resist frying a slice even though it was thick, but tomorrow night I will try to get a thin slice on it and see how it is. Looks pretty good for a lowly butt.

looks great Lee, yep, bring a sliced up slab for breakfast. I'll bring the griddle for cakes again. Liken the looks of that peppered slab.:D

Thanks,I got it all packed up and in the freezer. I had to use a knife to slice because there wasn't enough travel on the dinky slicer I used. I am making the pancake mix from scratch this time. I didn't care much for the just add water mix.. I fried alittle of the bacon today and my 4 year old Granddaughter really liked it. She said do that again grampa.
